4 thin cut chicken breasts
1 egg – beaten
1 1/3 C shredded cheddar cheese
1/2 C organic or gluten free panko bread crumbs
2 cloves minced garlic
1 tbs parsley flakes
Dash of salt, pepper and onion powder
1.) Beat egg in a bowl large enough to place a chicken breast in.
2.) Mix cheese, bread crumbs, garlic, parsley, salt, pepper and onion powder in large bowl
3.) Dip both sides of the chicken breast in the egg then place in breading mixture and evenly coat both sides.
4.) Place coated chicken breasts in an oiled baking dish.
5.) Bake at 375 degrees for 30 minutes or until fully cooked.
Cinnamon Roasted Sweet Potatoes
1 yellow | 1 Spoon
1-2 sweet potatoes, peeled and cubed (bite-sized)
1 tbs olive oil
1 tbs honey or maple syrup
1 tbs cinnamon
pinch of nutmeg
salt and pepper to taste
1.) Evenly mix all ingredients together in a bowl.
2.) Line a baking pan with parchment paper
3.) Spread coated potatoes out on pan
4.) Bake in 400 degree oven for 25 minutes
