Southwest Breakfast Frittata

Breakfast Frittata
12 eggs-beaten
dash of salt
leftover chicken stuffed bell peppers

Remove filling from peppers and place in a bowl.
Dice cooked pepper.
Mix with eggs
Pour into a greased baking dish.
Cover with foil, broil last five minutes with no foil (This is when you add cheese if you want it)
375 degrees for 40-45 minutes

6 servings
½ Green | 1 Red |1/2 Yellow | ½ tsp
