Happy New Year! Let’s get this started the right way. Instead of saying I’ll start on Monday, start now. Transition 2014 into 2015 with a commitment to cleaner eating and exercise.
A. Chicken with Green Beans and Carrots
Not much to explain with this one. It’s sort of hearty without all the guilt. I just used frozen veggies and steamed them. because I didn’t add rice to this meal, I doubled up on the veggies.
B. Pesto Chicken with Zoodles
I am in love with my Veggetti! It is going to make meal prepping and cutting gluten so much fun. This meal was light yet filling-a perfect dinner.
C. Broccoli Cheddar Quinoa Bites
This might be one of my favorite new recipes. It was super easy to make and the taste far exceeding my expectation. I opted to use a full size muffin pan. I entered the recipe into My Fitness Pal…2 bites=1 serving: 231 calories not too shabby. (23 carbs, 10 g fat, 13 g protein and 369 mg sodium)
D. Sweet Potato Hash with Turkey
Last time I made this, I made turkey balls to go with the hash. This time around, I thought why not just add the turkey right to the hash and save myself some time. The end result was pretty fabulous.
Eating healthier is only part of the battle to feeling and looking better. You need to workout as well.
