Meal prep was a breeze this week. Of course I am officially unemployed at this point so I wasn’t in some frenzy to get it done while trying to simultaneously clean the house and do laundry. I saved one meal for Monday since Chris was off work. (Which required me to switch Monday and Tuesday’s dinner. No problem though.)
This was another week where I only made some minor recipe adjustments. One being in the shrimp dish. I added a little rice and less chickpeas. An entire bowl of chickpeas just seemed like too much. I also mixed a pound of lean ground beef and ground turkey together then split. The half and half mixture was used for the stroganoff and meatloaf to add some extra flavor.
I also made a bonus breakfast meal-mini muffin egg white omelette. I had a coupon for egg whites and found precooked steak on sale and thought it would be perfect. I just cut the steak into smaller bite-sized pieces and mixed it with a little shredded cheese. (I used a cheddar and mozzarella mixture.) I filled my greased muffin cups with the mixture then topped it off with the egg whites. What a success. They were light and yummy not to mention an easy item for my husband to grab and go with.
This week also taught me how important that picture of your groceries can be. I set everything out and realized I was missing stuff. Then I divided the groceries by meal and realized I was missing an entire bag of groceries. Had I not done this, I would have been right in the middle of food prep! I called the grocery store and went back to get my missing goods. Before meal prepping, I probably never would have even noticed a few things missing or noticed days later when it was too late.
Another important milestone is my workout routine. I’ve never been one for keeping a steady routine-let alone a well planned one. Not this time around, I have a great workout buddy who helps me stay accountable and pushes me through on some of the hardest days. I am already noticing a difference in my energy levels. My pants are starting to fit a lot better too.
Update! My husband made the Mexican gumbo so delicious he cooked the rice, meat and beans separate then layered everything for the final dish check the quantities as this recipe makes quite a bit!
