Prep: 10-15 minutes | Bake: 450° | Cook: 12 minutes | Makes: 6 servings
1 12-inch pizza crust
1/2 C Roasted Pepper and Tomato Salsa or prepared thick and chunky salsa
1C rinsed and drained canned black beans
5 each, thin green and red bell pepper rings
1/3 C thinly sliced red or green onions
1 or 2 jalapeno peppers, sliced, seeds and stems removed
2 C shredded cheddar or Jack cheese
2 Tsp Tex-Mex Spice
Place crust on large baking sheet. Spread salsa evenly over crust. Top with beans, bell pepper rings, onions, jalapeno peppers and cheese. Sprinkle Tex-Mex spice evenly over cheese. Bake in a 450 degree oven for about 12 minutes or until crust is golden brown and cheese is melted. Cut into slices and serve immediately.
So…BBQ sauce is a great substitute for salsa. mozzarella cheese works just as good as cheddar. Diced veggies are easier to eat. Bacon makes everything even better.
If you are using a can of pizza dough, or any dough that’s not pre-made, lay it out on a greased baking sheet, poke some holes in it with a fork, and bake it for just a little longer than half the time the instructions say. This is how you avoid soggy dough. Dice up some bacon and give it a quick fry. If you have some leftover ham cubes, throw them on the pizza as well.
This pizza was so very good. Who knew black beans could even go on pizza?

Roasted Pepper and Tomato Salsa
1 15-oz can crushed tomatoes
1 C chopped roasted red peppers
1 clove garlic, peeled and minced
1 Tbs chopped cilantro or parsley
1 Tsp minced jalapeno chili pepper
1 Tbs olive oil
1Tsp olive oil
1 Tsp cider or balsamic vinegar
1/2 Tsp salt
Combine tomatoes and chopped red peppers in a mixing bowl. In a skillet, cook the garlic, cilantro and chili pepper in olive oil until garlic is soft. Stir into tomato mixture with vinegar and salt.
1/4 C ground dried chili pepper or chili powder
4 Tsp paprika
2 tsp salt
2 Tsp ground ginger
1 tsp black pepper
1 tsp ground cumin
1 Tsp onion powder
1 tsp garlic powder
1/4 tsp ground thyme
1/4 to 1 Tsp cayenne pepper
Combine all ingredients and store in a jar with a tight lid.
